Ingredients

  • 510 g white chocolate (melts or bars)

  • 1 can sweetened condensed milk

  • 30 g unsalted butter

  • 1/4 tsp salt

  • 1 1/2 tsp vanilla extract

Directions

  • Prepare the pan: Line a 20cm (8 inch) square baking pan with baking paper.
  • Combine ingredients: Place the chocolate, condensed milk, and unsalted butter into a heatproof bowl. (If using block chocolate, make sure to chop it into smaller, even pieces first).
  • Melt the mixture: Microwave the bowl for 30 seconds. Take it out and stir. Place it back into the microwave for another 30 seconds. Continue to stir until the chocolate is completely melted and smooth.
  • Add flavourings: Add the vanilla extract and salt to the melted mixture and stir well to combine.
  • Chill: Pour the mixture into your prepared baking tray. Cover it with plastic wrap and place it in the fridge for 3 hours, or until completely firm.
  • Slice and serve: Once firm, remove the fudge from the pan and use a sharp knife to slice it into 20 even pieces.

Notes

  • You can freeze fudge up to 3 months. Double wrap pieces of fudge in wax or baking paper and then wrap with plastic wrap or aluminum foil. To prevent fudge from freezer burn, place it in a zip lock bag or airtight container. It is best to store fudge in individual pieces, so you don't have to defrost all at once, only what your need. Do not place any other items on top of your fudge. Label and date of freezing.
  • To thaw fudge, place in the fridge. It will take 2-3 hours to thaw. Do not thaw in the microwave.
