Ingredients

  • 10 mini tortillas

  • 3 cups diced cooked chicken

  • 2 cups grated cheese

  • 1/2 cup corn

  • 3/4 cup thick and chunky salsa

Directions

  • Prepare Filling: Combine chicken, corn, cheese and salsa in a bowl.
  • Assemble: Place filling on one half of each tortilla, then fold over.
  • Cook: Heat skillet over medium with oil/butter and cook quesadillas 2-3 minutes per side until golden and cheese is melted.
  • Serve: Serve immediately with dipping sauces.

  • Tips
    Do not overstuff to make flipping easier.
