If you’re looking for the ultimate 'no-bake' win, this easy dark chocolate Rocky Road recipe is a rich, crunchy, and marshmallow-loaded treat your kitchen needs. With just five ingredients and 15 minutes of prep, this dark chocolate rocky road is my go-to for effortless entertaining.
I love a good rocky road, and this recipe has been in my family for over 20 years. Two decades of making this delicious treat! I’ve tried it with dark chocolate, milk chocolate, almonds, hazelnuts, and peanuts, both toasted and untoasted. My personal favourite is the combination of dark chocolate and almonds. It’s such a versatile recipe and a beloved family classic, though I’m often told I don’t make it nearly enough.
This could be the ultimate rocky road recipe, easily surpassing anything you’ll find in stores. The best part is you can choose any add-ins you like. While the classic version uses glace cherries, I think raspberry lollies or other gummy sweets work even better. Gummies bring an extra chewiness, especially once they’ve been chilled in the fridge.
There is no baking, just pop your rocky road in the fridge for 3 hours and you're done. An incredibly easy recipe to make, only 15 minutes and makes a wonderful gift for birthdays and Christmas. Get the kids involved, they'd love and they get to lick the spoon too.
Experiment with mix-ins
- Crunchy Additions: Try different nuts like hazelnuts (for a Nutella-like flavour), pistachios, macadamias, cashews, or pretzels. Crushed honeycomb, Maltesers, or biscuits (digestives, Shortbread, Oreos, Ginger Nuts) also work well.
- Chewy Additions: Instead of standard marshmallows, try different colours or flavours. Use Turkish delight, jelly lollies, gumdrops, raspberry licorice, or dried fruits like cranberries, glacé cherries, or apricots.
- Salty & Savory: Add salted popcorn to create a sweet-and-salty contrast.
Customise the chocolate base
- Use Quality Chocolate: Use good quality eating dark, milk or white chocolate rather than compound chocolate for the best taste and texture.
- Caramelized White Chocolate: Use Caramilk or caramelised white chocolate for a creamy, rich variation.
- Add-ins: Stir in a little coconut oil when melting the chocolate to make it easier to slice and give it a glossy finish.
Theme your variations
- Christmas: Use white chocolate mixed with red/green M&Ms, pistachio, dried cranberries, and gingerbread pieces.
- Biscoff/Spiced: Add Lotus Biscoff biscuits and a drizzle of Biscoff spread.
- Mint Lovers: Add crushed peppermint candy, mint cookies, or mint chips alongside the marshmallows.
- Nut-Free: Replace nuts with extra coconut, crispy rice cereal, or seeds.
- Easter: Top with mini Easter eggs or Speckled Eggs.
Best chocolate for making Rocky Road
Use a good quality chocolate such as Lindt or Cadbury. Personally, I would not use baking or melting chocolate. You could also buy good quality chocolate from a chocolatier such as Haigh's Chocolates or Margaret River Chocolate Company (both make premium chocolate), although this would be rather expensive it would also make eating rocky road a luxurious treat.
