Homemade Dark Chocolate Raspberry Brownies Ingredients

Ingredients you'll need for Dark Chocolate Raspberry Brownies

  • Dark chocolate: Use a dark chocolate with 70-85% cocoa, provides a more intense and deep rich chocolate flavour with less sweetness.
  • Brown sugar: Contributes a deeper, caramel-like flavour.
  • Raspberries: Provides a necessary tartness that balances the intense sweetness and richness of the chocolate, plus adding moisture.
  • Butter: It provides a rich, creamy base that perfectly complements the slight bitterness of dark chocolate and the tartness of raspberries.

Tips for the best Chocolate Raspberry Brownies

  • Fresh vs. Frozen Fruit: If you're using frozen raspberries, thaw them first and drain off any excess liquid to prevent the batter from becoming soggy. For fresh berries, choose firm ones so they hold their shape and don't get mushy during mixing.
  • Whisking: Make sure that the eggs and sugar whisked properly. Just combining isn't enough as you batter won't form a proper emulsion. Your egg and sugar mixture should be pale, thick and glossy. It should be like a thick milkshake. When you lift your beaters, you should see ribbons fall back into the bowl (as shown in the picture), not disappear quickly.

Ingredients

  • 300 g dark chocolate, 70- 85% cocoa, coarsely chopped

  • 150 g unsalted butter, coarsely chopped

  • 1 cup brown sugar

  • 2 eggs, room temperature

  • 1 1/4 cup plain flour

  • 200 g frozen raspberries, thawed and drained of excess liquid

Directions

  • Preheat and line: Preheat your oven to 180°C. Grease a deep 20cm square cake pan and line the base and sides with baking paper, making sure the paper extends over the edges, so it is easy to lift out later.
  • Melt the chocolate: Combine the butter and 200g of the chopped dark chocolate in a small saucepan. Stir over a low heat until smooth. Once melted and combined, remove from the heat and allow to cool for 5 minutes.
  • Mix the ingredients: In a separate, larger bowl, combine the plain flour, brown sugar, eggs, frozen raspberries, and the remaining 100g of chocolate.
  • Combine and bake: Pour your melted chocolate and butter mixture into the bowl with the dry ingredients and gently stir until just combined. Spread the batter evenly into your prepared pan and bake for 45 minutes.
  • Cool and slice: Leave the brownies to cool completely in the pan before cutting them into 16 even slices.
