Nothing elevates a weeknight meal quite like a velvety, homemade creamy white sauce. It’s surprisingly simple to make from scratch. With just 4 basic pantry staples, you can turn any dish into a comforting masterpiece.

A creamy white sauce is a kitchen staple made from butter, flour, milk, and stock. Ready in just 10–15 minutes. Melt the butter, stir in the flour to form a roux, then whisk in the milk and stock until smooth. This versatile, velvety sauce can be easily customised with cheese or seasonings. Perfect for pasta, vegetables, casseroles, or drizzling over meat dishes.

Master the roux

The roux (a paste of equal parts butter and flour) is the thickening engine of your sauce. 

  • Equal proportions: Use equal parts by weight of butter and flour.
  • Cook out the raw taste: After melting the butter and whisking in the flour, cook the paste for 1–2 minutes. It should look "bubbly" or like "wet sand" but do not let it brown, or you'll end up with a brown gravy instead of a white sauce.
  • Prevent scorching: Use a heavy-bottomed saucepan to distribute heat evenly and whisk into the corners to prevent the flour from burning.

Ensure a silky, lump-free texture 

Lumps are the most common failure, but they are easily avoided with technique. 

  • The temperature secret: Use warm milk to prevent the sauce from coagulating too quickly or "seizing".
  • Slow additions: Add the milk in very small increments at first (a few tablespoons at a time). Whisk vigorously after each addition until the mixture is a smooth paste before adding more liquid.
  • Constant agitation: Use a whisk rather than a spoon for the smoothest results. Once all milk is added, continue whisking as it comes to a simmer.
  • The fix: If lumps do form, you can save the sauce by passing it through a fine-mesh sieve or using an immersion (stick) blender.

Ingredients

  • 30 g butter

  • 1 tbsp plain flour

  • 1/2 cup milk, warmed

  • 1/2 cup stock

Directions

  • Melt the butter in a small saucepan over medium heat
  • Add the flour and mix until this forms a roux. Cook for one minute, stirring occasionally.
  • Take the saucepan off the heat and slowly add the milk and strained liquid, stirring continuously to avoid lumps.
  • Return to medium heat, cook for 3-4 minutes, stirring continuously until the sauce thickens.

    To prevent a thick "skin" from forming as the sauce cools, press a piece of plastic wrap or baking paper directly onto the surface of the sauce
