Ingredients

  • 115 g unsalted butter

  • 1/2 cup brown sugar

  • 1/4 cup castor sugar

  • 2 tsp vanilla extract

  • 1 egg room temperature

  • 1 egg yolk room temperature

  • 1 1/2 cups plain flour

  • 1/2 tsp bicarbonate soda

  • 1/4 tsp salt

  • 1/2 cup dark chocolate

  • 1/2 cup milk chocolate

Directions

  • Prepare the butter: Microwave the butter for about 40 seconds until just barely melted. It should almost be in liquid form but not hot.
  • Cream the wet ingredients: Using electric beaters, beat the melted butter with the brown and castor sugar until creamy. Add the vanilla and the egg and egg yolk one at a time, beating on low for about 15 seconds after each addition.
  • Combine Wet and dry: Add the plain flour, bicarb soda, and salt to the wet mixture. Mix until just combined. Gently fold in the dark and milk chocolate chips until incorporated.
  • Chill the dough: Cover the cookie dough with cling wrap and place it in the refrigerator to chill for 2 hours.
