This easy one pot sausage casserole is packed with flavour, making it ideal for batch cooking. This casserole sure to satisfy a crowd and so good, your family will be coming back for more.

Classic comfort food

When the weathers turns cold, I look for a dish that is warm and comforting. Anything like soups, roast, bakes stews and casserole usually what my family and I want. That's why I love this sausage casserole. Even better this dish is made all in one pot. Less washing up.

If you have never had a sausage casserole, then you are in for a treat. This rustic casserole is comfort in a bowl, with juicy thick beef sausages nestled in a rich sauce of slow-cooked tomatoes and onions. The kidney beans soak up all the bold, smoky paprika flavours, adding a creamy texture that perfectly balances the dish. Sweet, tender onions bring depth and warmth to every bite, making it feel like a cosy hug. It’s a great all-in-one meal, perfect for chilly nights or easy meal prep. Sausage casserole not only fills your home with an irresistible aroma but also delivers hearty, satisfying flavour every time.

Make ahead Sausage Casserole

You can definitely make this ahead, and it actually tastes even better the next day as the flavours have time to develop. This casserole keeps perfectly in an airtight container in the fridge for up to 3 days. Make extra and freeze it for later. You can freeze this recipe for up to 3 months. When you’re ready to use the casserole, take it out of the freezer the night before, then heat over a medium flame until warmed through. You can microwave it to reheat, though I usually prefer using the stovetop.

Ingredients you'll need for this Easy Sausage Casserole

  • Sausages: High-quality thick beef sausages. I have used pork, lamb and chicken sausages.
  • Beans: Kidney beans for that rustic texture. Adds a hearty, creamy texture and a nutritional boost of fiber and protein, making the meal more filling and budget-friendly. You can also swap kidney beans with cannellini beans for a creamy, nutty flavour, borlotti beans for heartiness, butter beans for melt-in-the-mouth softness.
  • Base and liquids: Canned chopped tomatoes combined with beef stock provides the main liquid.
  • Aromatics: Onions and garlic sautéed to build flavour.
  • Flavour boosters: Tomato paste, smoked paprika, and thyme to create a rich, savoury, and smoky flavour. Swap dried thyme for oregano, mixed herbs or Italian mixed herbs. For a spicy kick add 1/2 teaspoon of ground chilli or chilli flakes.

What to serve with Easy One Pot Sausage Casserole

What to do with leftover Sausage Casserole

Here are the best ways to transform a small batch of leftover mince into a brand-new meal for two:

  • The 15-minute smoky sausage pasta bake: Toss your remaining sliced beef sausages and that rich tomato and kidney bean sauce with two portions of freshly cooked penne or rigatoni. Pour it into a small baking dish, scatter a handful of mozzarella or cheddar cheese over the top, and grill for 5 minutes until bubbling and golden.
  • Smoky sausage and bean jaffles (toasties): Because the tomato paste, beef stock, and kidney beans create a beautifully thick gravy, it behaves just like a premium version of baked beans. Spoon a few tablespoons of the cold, thick mixture onto buttered bread, ensuring you get plenty of the sliced sausages and beans. Add a slice of sharp cheese and toast until crisp.
  • The next day sausage and bean tacos: Grab four small flour or corn tortillas. Gently reheat your leftover thick-sliced sausages and smoky tomato-bean sauce. Spoon the mixture into the warm tortillas, and top them with shredded lettuce and a dollop of sour cream or Greek yogurt. It feels like a quick Mexican fake-away lunch for two.
  • Crispy sausage and bean quesadillas: Lay two large flour tortillas flat on your bench. Place your cold leftover casserole on one half of each tortilla, making sure to spread out the thick sausage slices and kidney beans evenly. Scatter a handful of grated cheddar or mozzarella cheese over the filling, fold the tortillas in half, and pan-fry them in a dry skillet over medium heat for 3 to 4 minutes per side until the shell is crispy and the cheese is completely melted.
  • Sausage potato gratin / bake: Thinly slice two medium potatoes. Layer the potato slices in a small baking dish, spooning the leftover sliced sausages, kidney beans, and rich tomato sauce between the layers. Pour over a 1/4 cup of cream, top with a handful of grated cheddar cheese, cover with foil, and bake at 180°C (350°F) for 35 minutes until the potatoes are tender and the top is bubbling.

Ingredients

  • 8 thick beef sausages

  • 2 tbsp olive oil

  • 1 brown onion thinly sliced

  • 2 garlic gloves crushed

  • 1 tbsp dried thyme

  • 1 1/2 tspn smoked paprika

  • 1/2 tspn cumin

  • 2 tbsp tomato paste

  • 1/2 cup beef stock

  • 2 400g cans crushed tomato

  • 1 400g can kidney beans drained

Directions

  • Brown the sausages: Heat 1 tablespoon of olive oil in a frying pan over medium heat. Cook the sausages until browned all over (about 8 to 10 minutes). Move the sausages to a chopping board and slice them thickly. Set aside.
  • Sauté the aromatics: In the same frying pan, add the remaining tablespoon of olive oil and the onions. Cook over medium heat for 5 minutes until softened. Stir in the tomato paste and crushed garlic and cook for 1 minute. Add the smoked paprika, cumin, and dried thyme, cooking for another minute to release their aromas.
  • Simmer: Pour in the stock and crushed tomatoes and bring the mixture to a boil. Lower the heat to medium-low and let it simmer for 20 minutes.
  • Combine and serve: Stir in the kidney beans and the sliced sausages. Cook for another 10 minutes until the beans are heated through and the flavours are melded. Serve hot alongside a generous helping of mashed potatoes.

Notes

  • Make It Ahead: This casserole often tastes better the next day after the flavours have had time to "mingle" in the fridge.
