Ingredients

  • 1 kg carrots peeled and cut into chunks on a deep diagonal

  • 2 tbsp olive oil

  • 3/4 tsp salt

  • 1/2 tsp pepper

  • 3 garlic cloves, minced

  • 2 tbsp parsley chopped

Directions

  • Preheat: Preheat your oven to 220°C (430°F), or 200°C if you are using a fan-forced oven.
  • Prep and season: Cut your carrots diagonally into chunks. Slice any exceptionally thick pieces in half lengthwise so they all cook at the same rate. Toss the carrot chunks directly on a large baking sheet with olive oil, salt, and pepper. Spread them into a flat, single layer so they roast instead of steam.
  • Roast: Bake for 20 minutes, then temporarily remove the tray from the oven.Then flip the carrots and scatter the minced garlic and parsley over them. Toss quickly to coat evenly, ensuring the garlic doesn't burn during the initial high-heat roast.
  • Finish and serve: Return the tray to the oven for another 5 to 10 minutes until the edges are beautifully browned and caramelised. Remove from the oven and serve immediately while hot.
