  • 2 salmon fillets (approx. 200-225g each)

  • 1/3 cup panko breadcrumbs

  • 1/3 cup parmesan cheese, finely grated or shredded

  • 1 tbsp parsley, finely chopped

  • 1 tbsp chives, finely chopped

  • 1 tsp garlic powder

  • 1 tbsp olive oil

  • 1 tbsp Dijon mustard

  • 1 tbsp mayonnaise

  • 1 tsp lemon juice

Directions

  • Prep the oven and pan: Preheat your oven to 200°C (400°F). Line a baking sheet with parchment paper or foil for easy cleanup.
  • Mix the panko crust: In a small bowl, combine the Panko breadcrumbs, Parmesan cheese, parsley, chives, garlic powder, and olive oil. Stir until the crumbs are evenly moistened and look crumbly.
