I must say this grilled cheese sandwich, with its irresistible combination of caramelised onions and gooey cheese, is pure perfection. It's the best of both worlds, cheese and French onion soup all in one tasty bite. This would be one of my favourite ways of making a grilled cheese sandwich.

The caramelised onions really take the spotlight here. Onions are slowly cooked until they become jammy and deeply browned. Then combined with fresh thyme and a splash of balsamic vinegar to bring that iconic French onion soup taste to life. Once the onions are cooked, spread them generously over thick slices of bread, then pile on plenty of Gruyere and mozzarella cheese. Fry the sandwich on both sides until it’s golden brown and the cheese has melted perfectly, using salted butter for an extra burst of flavour. The secret to making it great is to go low and slow! Keep the heat gentle to ensure the bread doesn’t burn before the cheese melts to a creamy perfection.

How to make a French Onion Grilled Cheese Sandwich

Butter both sides of the bread, flip it over, layer on onions, Gruyère, and mozzarella cheese, then close the sandwich. Cook sandwich in a frying pan for 3-4 minutes until cheese is melted and bread is golden brown.

Ingredients

  • 2 medium onions, thinly sliced

  • 4 tbsp salted butter

  • 1 tbsp balsamic vinegar

  • 1 tsp fresh thyme

  • 1/4 cup beef broth

  • 1/2 cup Gruyère cheese, grated

  • 1/2 cup Mozzarella cheese, grated

  • 4 slices sourdough or rustic bread

Directions

  • Caramelise Onions: In a frying pan, melt 2 tbsp butter over medium heat. Add onions and cook slowly for 20-30 minutes, stirring occasionally, until deeply golden brown.
  • Deglaze: Add balsamic vinegar, thyme, salt, pepper, and beef broth. Cook until the liquid has evaporated, making the onions syrupy.
  • Assemble: With the other 2 tbsp of butter, butter one side of each bread slice. Flip the bread and on the non-buttered side, layer the onions, Gruyère and mozzarella, then top with the other bread slice (buttered side out).
  • Grill: Cook in a frying pan over medium heat for 3-4 minutes per side, or until the bread is golden brown and the cheese is melted.
